Hello! OK I'll get right to it. My latest obsession is this pancake recipe: https://www.weightandwellness.com/resources/recipes/gluten-free-pancakes made with bob red mill's Paleo flour and a buckwheat flour instead of almond flour and coconut flour (as used in this recipe). Coconut milk really makes it. I have made it the original way, and that is quite good as well. This pancake is very crêpe like and I'm finding that it is absolutely delicious smeared with butter, a nut butter, (I'm using sun butter) and then adding a few raspberries and rolling it up, like a crêpe. I did sneak some wild blueberries into the batter as well, probably 3/4 of a cup. Be warned, though, the batter is runny, and the pancake is delicate. It will tear easily. A pancake or two with a couple of fried eggs and some chicken sausage provides a satisfying breakfast.
I will admit to having a couple of pancakes with butter and sun butter last night after dinner. I was still hungry, and I wanted something a little sweet without taking myself off the healthy track.
I also seem to be obsessed with soup, and with the change in season eminent, (the tree on our pool deck is already changing), I'm finding myself longing for a pot of beans. So, perhaps it's time to bring that crockpot down from the shelf.
What's your favorite recipe? I made a minestrone soup last week, as well as the week before, using the vegetables I had on hand, so the soups were a bit different. I seem to be quite thrilled and tickled with a pot of vegetable soup. Is there a soup that brings you joy this time of year? Please share. Help me get out of my food rut!
Tomorrow is the next round of the new treatment. I'm definitely noticing fatigue and my red blood cells are starting to drop below the normal range and stay there. My oncologist is checking my blood work every week. I really like that he's thorough.
The fatigue is probably the biggest thing. Those three days that followed I was really tired and I am noticing that the evening is a really low energy time of day for me.
I'm also obsessed with re-educating myself about fats and nutrition, deepening my knowledge. Here's a really interesting video about healing hormonal, thyroid function on a high fat carnivore diet.
